Mustard Chilli Pumpkin

heat oil in pot (generous)...toast mustard deeds , cummin seeds, curry leaves...& dried chillies......now add chopped pumpkin( 2 cm cubes)..stir fry on high heat for a few minutes until all pumpkin is coated...season ...lower heat and add garlic cloves....simmer covered until pumpkin is half cooked...add a small amount of sugar and open lid to finish dish... until pumpkin is cooked through....place on a bed of baby spinach....I tempered dried chilli , roughly chopped almonds and a few more curry leaves in a pan and garnished the dish.....enjoy!
