Spicy Lamb Sausage (for a large quantity, recipe may be reduced)

5 pounds ground lamb
1 large bunch cilantro
6 green chillies (I used Serrano)
3 tablespoons ginger garlic paste
1 large onion roughly blended and juiced squeezed ( use a thin cloth of some kind like a linen napkin, reserve juice)
2 teaspoons turmeric powder
2 tablespoons cumin powder
2 tablespoons coriander powder
4 Tablespoons of molasses
3 tablespoons salt
Blend cilantro and chillies in food processor.
Mix together all the ingredients in a skillet, make a small patty and cook on skillet to make sure all the seasonings are right. Adjust seasonings if necessary and add onion juice if patty falls apart.
Stuff in sausage casing. Can usually be found at a butcher. Twist to form links.
Braai or Fry or just make Patties for burgers.
