Boerewors Chutney & Pap

Ingredients :
500g ready made boerewors
2 tbsp canola oil
1/2 sliced onion
5 curry leaves
1 to 2 tbsp mix masala
1 chopped tomatoe
3 grated tomatoes
Dhania
Salt
Method :
Boerewors :
Simmer the boerewors in a frying pan for approx. 10 minutes (do not over cook), allowing the fats and oils to be released. Turn it over so both sides are cooked equally. Drain all the fatty oil in a collinder. Cut up the boerewors to your desired sizes. Set aside.
For the chutney :
In a pot add the oil, onions, curry leave and braise until the onions are golden brown. (You can also add green chillies at this point for more heat, but I do not use chillies as my kids will also be eating.)
Add the mix masala, tomatoes and salt, let it simmer on low heat with the lid closed, keeping in the moisture. This should cook until you see the cut up tomatoes melting and blending in with the grated tomatoes. Add the boerewors and the Dhania and mix well.
For the pap, follow the instructions on the Millie meal packaging.
Enjoy with a side of salad or as I have did with sliced cucumbers.
Coke always goes down nicely with this meal😋
