Chocolate chip cookies

200 g butter, softened

200 ml caster sugar

200 ml dark brown sugar

2 large eggs

7 ml (1½ t) vanilla essence

580 ml (2⅓ c) flour

5 ml (1 t) bicarbonate of soda

pinch of salt

150 g chocolate chips

Preheat the oven to 180 °C. Grease a baking sheet and line with baking paper.

1 Beat the butter and sugars with an electric mixer until creamy. Add the eggs and vanilla, beating until blended.

2 Combine the flour, bicarbonate of soda and salt in a bowl. Gradually add to the butter mixture, beating until just blended. Fold in the chocolate chips until evenly spread.

3 Put spoonfuls on the lined baking sheet and bake in batches for 8-12 minutes. Remove from the oven and cool on a wire rack.
