Chops Chutney (potatoes are optional)

Ingredients:
1 kg lamb chops
1 tablespoon ginger/garlic
4 large onions (slivered)
5 large tomatoes (grated or roughly ground in a food processor)
3 green chillies (slit or you may grind them with the tomatoes)
½ cup cooking oil
1 cinnamon stick
2 to 3 cloves garlic (crushed)
Salt to taste
2 tablespoons chilli powder (or more)
1 tablespoon crushed dried red chillies (optional)
1 teaspoon dhunia/jeera powder
½ teaspoon turmeric powder
1 teaspoon sugar
2 potatoes (peeled and quartered – optional)
1 sprig curry leaves
½ bunch dhunia (chopped)
METHOD:
Heat oil and add onions. Fry until onions softened and lightly golden brown. Now add ginger/garlic and fry a further ½ a minute. Add chops, spices, green chillies, sugar, crushed garlic and salt and allow to fry on low heat (2 to 3 minutes) until its starts to catch at the bottom of the pot. If using potatoes add at this stage too. My youngest son loves potatoes in chops chutney, so I always add them.
Add tomatoes and cook until all water evaporated and chutney dry. If too dry, add a little water. Garnish with greens and serve with rice or roti…
NOTE: If using mutton, add the meat and after frying the onions and adding ginger/garlic, but leave out the spices and the rest of the ingredients. Add about a cup of boiling water and leave the meat to boil until it softens (you may need to add more water if the meat is not quite soft), then add the rest of the ingredients and cook as per recipe…
