Chops Chutney (Variation)

Ingredients for CHOPS:
1 kg lamb chops
1 tablespoon ginger garlic
2 teaspoons chilli powder
1 tablespoon flour
¼ teaspoon black pepper (freshly ground)
Fine salt to taste
2 tablespoons oil
Ingredients for CHUTNEY:
4 large onions
1 teaspoon crushed garlic
½ teaspoon jeera seeds
½ teaspoon mustard seeds
5 large tomatoes (finely chopped)
3 green chillies (slit)
2 tablespoons chilli powder
½ teaspoon turmeric powder
Salt to taste
½ cup oil
1 sprig curry leaves
A little chopped dhunia to garnish
METHOD CHOPS:
Add all ingredients to chops (except oil) and mix well (if too dry add a tablespoon of water and toss). Leave to marinate about an hour. Add oil to a pan and heat on high. Throw in chops and flash fry quickly on both sides to brown… Remove and set aside.
METHOD CHUTNEY:
Add oil to pot. Heat and add onions, jeera and mustard seeds. Fry until softened and just turning brown. Add garlic and green chillies and simmer a further ½ a minute. Add spices and ‘fry’ until it starts to catch at the bottom of the pot. Add the finely chopped tomatoes and simmer (covered) until tomatoes softened and cooked through and all water evaporated. Lastly, set the chops in the chutney and gently simmer for a further 10 minutes. Garnish with greens and serve with roti…
