Baking time: 8 min
750 ml (3 c) flour
2,5 ml (½ t) baking powder
220 g butter, softened
250 ml (1 cup) sugar
2 eggs
10 ml (2 t) vanilla essence
250 ml (1 c) peanut butter
Preheat the oven to 180°C and line a baking sheet with baking paper.
1. Combine the flour, baking powder and salt in a large bowl and set aside. In a separate bowl, beat together the softened butter and sugar until pale and fluffy.
2. Add the eggs and vanilla and mix well. Slowly add the flour mixture, beating until well combined and a soft dough forms. Beat in the peanut butter.
3. Remove the dough, divide in half and place each half between two sheets of baking paper. Roll out each half to 5 mm thickness. Use a round cutter to cut out circles.
4. Place the biscuits on the prepared baking sheet and bake for 8 minutes or until golden.
