Cookies:
185g plain flour
125g soft butter
60g caster sugar
Icing:
125g icing sugar
1-2 tbsp warm water
food colouring
Preheat the oven to 180⁰C (Fan 160).
Sift the flour into a large mixing bowl.
Stir in the sugar.
Rub in soft butter until mixture resembles fine breadcrumbs.
Mix together with your hands until the mixture resembles a soft ball of dough.
Roll out on a lightly floured surface until it is ½ cm thick.
Cut dough into Star Shapes (or circles using a cup turned upside down).
Put shapes on a lightly greased tray.
Bake in the oven for about 10-12 minutes until pale golden.
Put the cookies on a wire rack to cool. Mix the icing sugar and water until smooth, then add a drop of food colouring.
When biscuits are cool, spoon half a teaspoon of icing on each one and spread out evenly.
