Chicken Kofta Pita Breads

25 min cooking time ~10 Min preparation time~ Serves 4
Prepare, gather and have ready all your ingredients in front of you before you begin cooking – this is known as mis en place.
Ingredients
500 g Chicken Mince
5 ml Chicken Spice
10 ml Coriander
15 ml Fresh Coriander or Mint, chopped
200 g Fat Free Greek Yoghurt
15 ml Mint Sauce
¼ Cucumber grated and squeezed to remove as much moisture as possible
Pita Breads
Salad Leaves
Tomatoes
Instructions
Combine chicken mince, spices and coriander or mint. Mix well.
Using wet hands make 8 sausage shapes and thread onto 8 skewers.
Press firmly and then grill for 10 -12 minutes turning occasionally until cooked through.
Mix the yoghurt, mint sauce and cucumber.
Remove the skewers and serve the koftas in warmed wholewheat pita breads with salad leaves, tomatoes and the yoghurt dressing.
