Chicken rolls with mealie rice

Serves 4
Preparation time: 15 min
Cooking time: 30 min
4 chicken breasts
250 ml (1 c) grated Mozzarella cheese
handful of fresh coriander
250 g streaky bacon
MEALIE RICE
15 ml (1 T) oil
2 onions, sliced
300 g mealie rice
750 ml (3 c) hot vegetable stock
salt and freshly ground black pepper
200 g peas
200 g green beans, blanched
400 g spinach, finely chopped
60 ml (¼ c) cream
1 Preheat the oven to 200 °C.
2 Butterfly the chicken breasts and pound lightly to flatten. Sprinkle the cheese and coriander in the middle of each chicken breast. Start rolling up a chicken breast like a sausage, wrapping 3 strips of bacon around the roll to hold it together. Secure with cocktail sticks. Repeat with the remaining chicken.
3 In a pan over medium heat brown the chicken rolls. Transfer to a baking sheet and bake in the oven for 20 minutes.
Mealie rice: Heat the oil in a pan and fry the onions until soft. Add the mealie rice and stir well.
Add a ladleful of stock, stirring continuously until it’s absorbed. Repeat until the mealie rice is cooked. Season with salt and pepper.
Stir in the peas, beans, spinach and cream.
7Spoon the mealie rice into serving bowls. Slice the chicken and arrange on top of the mealie rice.
