Flourless pear cake

Serves: 6

Preparation: 15 min

Baking: 1 hour

• 125 ml (½ c) mixed nuts, chopped

• 310 ml (1¼ c) brown sugar

• 10 ml (2 t) vanilla essence

• 200 g butter, softened

• 6 eggs

• 200 g ground almonds

• 15 ml (1 t) cocoa, sifted

• 200 g dark chocolate, melted

• 3 firm pears, peeled, halved and pips removed

Preheat oven to 180 ⁰C and line a 20-cm round cake pan with baking paper.

1. Coat the base with chopped nuts. Beat the sugar, vanilla and butter in bowl until light and fluffy. Add the eggs, almonds, cocoa and melted chocolate and whisk until combined.

2. Spoon the mixture into the prepared pan. Evenly arrange the pears cut-side down and bake for 1 hour or until fully cooked. Remove the cake from the oven and leave to cool in the pan.

3. Remove the cake from the pan and dust with cocoa powder.
