GRILLED CALAMARI WITH LEMON BUTTER SAUCE

Calamari is one of those funny dishes. Most people prefer to order it in a restaurant because they are nervous about cooking it themselves. After trying this recipe though, you will wonder why you ever got nervous in the first place.
There are just four simple rules to guarantee a great plate of Calamari:
Use only the best quality. Use the patagonica calamari or any brand that states the Calamari is from the Falkland island waters. The patagonica is a bit more expensive than the large rings available on the market but it is worth every cent. The patagonica also shrinks very little. The tubes are about 8-10cm long and can be done whole or cut them into smaller rings.
When grilling it, make sure you have a very hot pan or grill and do not put too much at a time. If you put too much the calamari will boil in the juices and go tough. This is the main reason why most people prefer deep fried, because it is very tender due to the high heat and fast cooking. When grilling the calamari should not take much more than 2-3 minutes to cook.
Always have everything ready for the meal before you start cooking the calamari. This should be the last thing you do and then serve it immediately.
Whatever you do, don’t overcook the calamari. When cooking fish a little bit under is better than over cooked. When you find yourself thinking ‘just two more minutes’ that is your queue to remove it immediately.
Ingredients
500g Calamari Patagonica
30ml Olive oil
5ml Fish spice
100g Butter
1 Lemon
50ml Cream
Method
Prepare a direct fire.
Place the Manturion griddle or the wok from your BBQ system on top to heat up.
Add oil and then the calamari. You should hear a sizzle when the calamari hits the pan.
Season with fish spice while grilling and squeeze some lemon juice over the calamari.
When the calamari is cooked, remove from the griddle.
Pour lemon juice, butter and cream in the griddle and just bring to the boil.
When ready, pour the sauce over the calamari and serve.
Tip: Calamari is great with savoury rice or even salad and this calamari is such good quality that it is even delicious when served cold.
