Oven Grilled Kingklip with Potato Wedges

400g Kingklip fillets to be marinade for about 2hours.

Marinade:

1/2 each salt and pepper

1/4tsp each dried dill & mustard

25ml soya sauce

25ml fish sauce

1tsp ginger n garlic paste

1tbsp olive oil

50ml lemon juice

Once marinaded, place grill rack over oven pan and grill fish for 5min each side in preheated oven of 200deg.

Potato wedges

Boil potato wedges in salted water until almost cooked

Drain and cool

In same pan add a dash or two olive oil, salt,pepper, crushed dried rosemary and paprika. Allow to wedges to stand in spices for about 10 to 15min

Add onto grill rack together with fish and grill for about 10minutes.

Sprinkle fish and potato with fresh or dried parsley.
