Peri-peri prawns

The sauce can be stored for a year.

Serves 6

Preparation time: 8-12 min

Standing time: 1 hour

Cooking time: 10-15 min

30 prawns

MARINADE

500 g dried chillies

250 ml (1 c) olive oil

250 ml (1 c) sunflower oil

2 garlic cloves

250 ml (1 c) lemon juice

30 ml (2 T) salt

1. Put the prawns in a glass bowl.

2. MARINADE Pulse all the ingredients for a few minutes in a food processor until well blended.

3. Pour over the prawns, mix to coat well then marinate for about 1 hour.

4. Braai the prawns over moderate coals until just cooked. Serve with lemon wedges.

TIP Braai the prawns directly on the grill over medium-hot coals. Turn often and baste. The prawns are cooked when the shells turn pink, which should be after about 8 minutes. Heat the rest of the marinade and serve as a dipping sauce.
