Sugar-free ginger biscuits

Baking: 10 min

250ml (1 c) flour

125ml (½ c) oat bran

5ml (1 tsp) ground ginger

2.5ml (½ t) ground mixed spice

2.5 ml (½ t) bicarbonate of soda

60 ml (¼ c) xylitol sweetener

45 ml (3 T) water

40 g margarine

1 large egg

Preheat the oven to 180 °C. Grease 1 or 2 baking trays.

1 Mix the flour, oat bran, ginger, mixed spice and bicarbonate of soda.

2 Heat the sweetener and margarine together in a saucepan over low heat, slowly pour in the water while sitrring until the sweetener has dissolved.

3 Add the sweetener mixture and egg to the dry ingredients and mix well.

4 Roll the dough into small balls and arrange on the baking tray(s). Flatten slightly with your hand or the bottom of a glass. Bake for 10 minutes or until the biscuits are firm. Cool on a wire rack.
