Bacon Tacos

Ingredients:

8 or 16 corn tortillas

1 package bacon

coleslaw, your favorite recipe

pico de gallo

Instructions:

Cook bacon in the oven in a single layer, according to this method. While bacon cooks prepare pico de gallo.

When bacon is completely cooked, remove from oven and let cool and drain on paper towels. Break bacon into large pieces.

Warm tortillas in the microwave for about 20 seconds, top with bacon, coleslaw, and pico de gallo.

Note: Some people like to double up the tortilla, the choice is yours if each taco uses one or two tortillas.

Makes 8 tacos
