EASY LAYERED LAMB BREYANI

2kg lamb cut into small pieces
3cups of rice parboiled
I cup breyani lentils parboiled
Wash meat and place in large dish
To this add:
1 cup yoghurt
1 tin crushed can tomatoes or fresh
Curry leaves
2Tbl sp crushed green chillies
Few bay leaves
1 Tblsp salt
3 Star anise
5 cardamom pods lightly roasted first
3 cinnamon sticks
1 Tbl sp roasted somph
1tsp saffron (heated and crushed)
1Tbl sp garam masala
1Tbs ginger/garlic
1 tsp turmeric
Slice 2 large onions & fry in 125g butter and 1/4 cup oil - place this in meat mixture
Marinade for about 2 hours
Peel 4 potatoes - cut into two and half boil
To layer breyani
Take a thick based pan
Grease bottom with butter
Place half lamb mixture
Place half lentils
Place all potatoe
Place 1/2 rice
Repeat lamb and lentils
Place rest of rice
Put pats of butter around rice
In the middle put a handful mint
Pour 1 - 2 cups of water with egg yellow food coloring
Cover with foil and place lid
Place in oven at 180 deg for 2 1/2 to 3 hours
You can check after two hours.
