Cauliflower and Mushroom Curry

Ingredients:
1 cup mushrooms (cut into pieces)
2 cups cauliflower florets (washed, cut and drained)
¼ cup oil
1 teaspoon crushed garlic
1 large onion (finely sliced)
1 large tomato (finely chopped)
2 tablespoons chilli powder (or more)
1 teaspoon dhunia/jeera powder
1 teaspoon turmeric powder
2 whole green chillies (slit)
1 bay leaf
Salt to taste
1 teaspoon sugar
1 sprig curry leaves
Chopped dhunia for garnish
METHOD:
Fry onion and bay leaf in oil until golden brown. Add garlic and braise a further 20 seconds. Add tomatoes, salt and spices and simmer until tomatoes softened and spices starting to catch at the bottom of the pot. Add green chillies, sugar, mushrooms and cauliflower and leave to simmer until cauliflower and mushrooms softened and cooked through and curry dry. You may have to add a little water to aid the cooking process.
