SAUCE
handful of fresh coriander, finely chopped
30 ml (2 T) soy sauce
2 red chillies, finely chopped
3 garlic cloves, crushed
15 ml (1 T) brown sugar
5 ml (1 t) oil
salt and pepper
30 ml (2 T) oil
MEAT AND RICE
400 g steak, thinly sliced
250 ml (1 c) rice, rinsed
30 ml (2 T) oil
½ onion, sliced
100 g baby spinach
30 ml (2 T) soy sauce
1 Sauce: Mix the ingredients well in a dish large enough to hold the meat.
2 Meat and rice: Beat the meat with a mallet to flatten slightly. Transfer to the dish with the coriander mixture and mix to coat the meat well. Thread the meat on 12 skewers.
3 Bring the rice and salted water to the boil and simmer for 15 minutes or until done.
4 Heat the oil in a frying pan over high heat. Add the meat and cook for 3 minutes on one side. Reduce the heat, add the onion, turn the skewers and cook a further for 5 minutes. Remove the skewers, add the spinach and cook until just wilted.
5 Divide the rice and spinach among plates, drizzle with the soy sauce and top with the skewers.
