Microwave jacket potatoes with pork sausages and beans

• 4 potatoes
• 60 ml (¼ c) oil
• 1 red onion, sliced
• 15 ml (1 T) brown sugar
• 15 ml (1 T) balsamic vinegar
• 8 pork sausages
• 1 can (400 g) baked beans
• 5 ml (1 t) paprika
• 20 g butter
• salt and pepper
• salad leaves to serve
1 Wash the potatoes and prick with a fork all round. Dry well and arrange on a microwave-safe plate. Drizzle with half the oil and microwave for 4 minutes on full power.
2 Dry the potatoes with paper towels. Return to the plate, other side up, and microwave on full power for 4 minutes.
3 Remove the plate from the microwave and leave to stand for 2 minutes. Check if the potatoes are soft by pricking them in the centre. If not cooked through, microwave for another few minutes.
4 Put the onion in a greased microwave-safe bowl and microwave on high for 2 minutes. Sprinkle the sugar and vinegar on the onion and microwave for another 4 minutes or until the onion is glossy.
5 Put the sausages on a plate and pour the remaining oil over. Microwave on high for 5 minutes or until cooked through.
6 Put the baked beans and paprika in a microwave-safe bowl and microwave on high for 2 minutes or until heated through.
7 Cut open the potatoes, add a knob of butter to each and season with salt and pepper. Pour the beans over. Top with the sausages and the onions and sprinkle salad greens over.
