Microwave savoury mince enchilada

1 onion, chopped
1 garlic clove, chopped
1 carrot, diced into pea-size pieces
300 g lean beef mince
1 can (400 g) chopped tomatoes
60 ml (¼ cups) beef stock
5 ml (1 t) dried mixed herbs
salt and pepper
4 tortillas
handful of grated Cheddar cheese
1 Put the onion, garlic and carrot in a microwave-safe bowl. Mix in the mince with a fork, breaking up the meat until the ingredients are well combined. Cover the bowl with clingfilm, leaving a small gap for steam to escape, and microwave on high for 3 minutes.
2 Remove the bowl, stir again to break up the mince, cover and microwave on high for a further 1 minute.
3 Add the tomatoes, stock and herbs to the bowl. Mix well, cover again and microwave on high for 3 minutes. Season with salt and pepper.
4 Spoon about 60 ml (¼ c) of the savoury mince onto each tortilla. Roll up tightly. Arrange seam-side down on a greased microwave plate. Sprinkle cheese over the enchiladas and microwave on high for 2 minutes or until the cheese has melted and is bubbly.
