Pasta with tuna and vegetables
Serves 6
Preparation time: 15 min
Cooking time: 10 min
SALSA
½ onion, finely chopped
½ green pepper, chopped
1 cucumber, chopped
1 large firm tomato, diced
6 calamata olives, pitted and chopped
1 red chilli, chopped
handful fresh coriander, finely chopped
salt and freshly ground black pepper
juice of 1 lemon
PASTA
250 g wholewheat pasta
30 ml (2 T) olive oil
45 ml (3 T) balsamic vinegar
30 ml (2 T) chopped parsley
2 gherkins, grated
2 capers, finely chopped
2 cans (170 g each) tuna in water, well drained
salt and freshly ground pepper
SALSA
Mix the salsa ingredients, cover and set aside.
PASTA
Cook the pasta.
Meanwhile mix the oil, vinegar, parsley, gherkins and capers and add 30 ml (2 T) pasta cooking water.
Put the pasta in a bowl, pour over the sauce and toss.
Leave to cool.
Add the salsa and tuna and toss.
Season with salt and pepper.
