Pork fillet with herb and spice coating

Serves 4-6
Preparation time: 7 min
Cooking time: 10-15 min
15 ml (1 T) soy sauce
10 ml (2 t) olive oil
600 g whole pork fillet
5 ml (1 t) freshly ground blackpepper
10 ml (2 t) dried oregano
10 ml (2 t) ground dried chillies
10 ml (2 t) ground cumin
10 ml (2 t) ground coriander
45 ml (3 T) chopped fresh parsley
Preheat the oven to 220 °C and line a baking sheet with aluminium foil.
Grease with nonstick spray.
Mix the soy sauce and olive oil and roll the pork fillet in the mixture until well coated.
Mix the remaining ingredients and roll the meat in the herb and spice mixture to coat completely.
Transfer the fillet to the baking sheet and roast for 10-15 minutes, depending on the thickness of the fillet or until done.
Cut into portions and serve with roast veggies of your choice or pasta.
TIP: Pork is ideal slimming food because it’s easy to cut off visible fat.
