Baked sausages in vegetable and tomato sauce

Serves 2-4
8 sausages (frankfurters, chorizo or Vienna sausages)
10 ml oil
1 onion, quartered
100 g baby marrows, cut into pieces
150 g mushrooms, quartered
410 g canned tomatoes
25 ml chutney
10 ml sweet chilli sauce
10 Worcester sauce
20-30 ml soft brown sugar
salt and freshly ground black pepper
Cut the sausages into pieces and set aside.
Heat the oil in a large saucepan and fry the onion, baby marrows and mushrooms for a few minutes.
Add the canned tomatoes, chutney, sweet chilli sauce, Worcester sauce and soft brown sugar and season with salt and freshly ground black pepper.
Reduce the heat and simmer for 20 minutes or until the sauce is fragrant and done.
Add the sausages and simmer for a few minutes.
Serve with creamy polenta or pasta.
