Barbecue Pork Ribs

2 kg pork ribs
SAUCE
60 ml (¼ c) Worcester sauce
45 ml (3 T) tomato sauce
2 ml (½ t) mustard powder
30 ml (2 T) barbecue spice mix
15 ml (1 T) dark brown sugar
15 ml (1 T) honey
45 ml (3 T) lemon juice
salt and pepper
TO SERVE
fresh thyme
mashed potatoes
1 Boil the ribs in a pot of water for 30 minutes or until the bones stick out.
2 Put the ribs on a large plate, cover with three layers of clingfilm and microwave on high for 3 minutes.
3 Sauce: Mix the ingredients in a microwave-safe bowl and microwave on high for 2 minutes. Stir.
4 Baste the ribs with the sauce and cover with the clingfilm again. Microwave for 4 minutes, basting after 2 minutes.
5 Remove the ribs from the microwave and rest for 5 minutes wrapped in clingfilm.
6 To serve: Garnish with fresh thyme and serve with mashed potatoes.
