Chicken Tacos

60 ml (¼ c) sour cream
1 packet (30 g) taco seasoning mix
4 chicken breasts, cooked and shredded
8 taco shells
1 head lettuce, shredded
1 tomato, chopped
4 spring onions, sliced
100 g black olives, sliced
1 avocado, diced (optional)
250 ml (1 c) Cheddar cheese, grated
1 Combine the sour cream and 5ml (1 t) of the taco seasoning in a small bowl. Cover and refrigerate until ready to serve.
2 Toss the chicken with the remaining taco seasoning in a bowl. Cover loosely with clingfilm and icrowave until the chicken is heated through, 2-3 minutes.
3 Put the taco shells on a plate and microwave for 2 minutes.
4 Fill the taco shells with the chickn and top with lettuce, tomato, onions, olives, avocado (if using), cheese and a spoonful of the seasoned sour cream.
