Fish Pasta Parcel

500 g tagliatelle pasta

4 leeks, sliced

2 garlic cloves, crushed

125 ml (½ c) double cream

150 g mushrooms, sliced

600 g hake fillets

salt and pepper

20 g butter, melted

30 ml (2 T) oil

1 Preheat the oven to 170 °C.

2 Cook the pasta in a large pot of salted boiling water until just done but still firm.

3 Fold four large sheets of baking paper in half for the parcels. Spoon the cooked pasta, leek and garlic on the four double sheets, top with a spoonful of cream and add the mushrooms and fish. Season with salt and pepper. Mix the butter and oil, drizzle over the fish and mushrooms.

4 Fold the baking paper into parcels, ensuring the edges are sealed, and bake for 15 minutes, or until the mushrooms are cooked.
