Hamburgers stuffed with mozzarella

Serves 2-4
4 ripe tomatoes, halved
salt and freshly ground black pepper
400 g mince
1 small onion, grated
5 ml ground cumin
5 ml ground coriander
10 ml Worcester sauce
1 egg, whisked
20-30 ml finely chopped parsley
80-100 g mozzarella, cubed or coarsely grated
Preheat the oven to 200 ° C and arrange the tomato halves on a baking sheet.
Season with salt and freshly ground black pepper and bake for about 10-15 minutes.
Mix the mince, onion, cumin, coriander, Worcester sauce, egg and parsley in a large mixing bowl.
Shape into hamburgers and make a hole in the middle of each hamburger.
Insert a mozzarella cube or grated mozzarella into each hole and reshape the meat around cheese.
Heat a griddle pan and grill the hamburgers until brown on both sides.
Remove the tomatoes from the baking sheet and set aside.
Arrange the hamburgers on the baking sheet and bake for about 10 minutes or until the cheese has melted.
Serve with pesto pasta and the tomato halves.
