Mushrooms with mozzarella and herbs

Serves 4

Preparation: 5 min

Cooking: 10 min

12 slices ciabatta bread

olive oil for brushing

salt and black pepper

1 clove garlic, halved, for rubbing

40 g butter

400 g brown mushrooms, halved

2 sprigs rosemary

3 sprigs thyme

250 g mozzarella, torn

1 Heat a large frying pan over high heat. Brush the bread with oil and sprinkle with salt and pepper. Toast in the pan for 2 minutes or until golden. Rub with the garlic and set aside.

2 Melt the butter in the pan. Add the mushrooms, rosemary, thyme, salt and pepper and cook over high heat for 5 minutes or until golden.

3 Top with the mozzarella and stir in until completely melted. Serve with the garlic toasts.

Tip: The bread can also be toasted in a toaster then rubbed with the garlic.
