Soy Sirloin with Julienne Apples

Serves 4

Preparation: 5 min

Cooking: 10 min

250 ml (1 c) soy sauce

3 garlic cloves, crushed

3 chillies, chopped

4 sirloin steaks

15 ml (1 T) oil

JULIENNE APPLES

2 red apples, cut into matchsticks

1 red onion, sliced into thin strips

45 ml (3 T) apple cider vinegar

1 green chilli, chopped

2 garlic cloves, crushed

5 cm fresh ginger, finely grated

1 Simmer the soy sauce with garlic and chillies in a pan over a medium heat until reduced.

2 In another pan over a high heat, sear the steaks in the oil until browned on both sides. Remove and transfer to the chilli-soy sauce, turning to coat. Cook slowly for 5 minutes or until done to your liking.

3 Julienne apples: Toss the apple and red onion with the vinegar, chilli, garlic and ginger. Serve with the steak.
