Serves 4
Preparation: 5 min
Cooking: 15 min
4 x 200 g thick steaks
3 garlic cloves, crushed
2 ml (½ t) chilli flakes
30 ml (2 T) oil
salt and black pepper
4 crusty rolls
soft butter
watercress and baked potatoes for serving
1 Pound the steaks between sheets of clingfilm to flatten slightly.
2 Mix the garlic, chilli flakes and oil and rub over the steaks. Season with salt and pepper.
3 Sear the steaks in a very hot pan for 3 minutes on each side or until done to your liking.
4 Split the rolls and moisten the cut sides with the pan juices, then top with a piece of steak and sandwich together.
5 Butter the outside of the rolls, then transfer to a clean pan, cover with baking paper and top with a heavy pan or pot. Over low heat, slowly brown and crisp one side then flip and do the same on the other side.
6 Serve with watercress and baked potatoes.
