Steak sandwiches with onion marmalade

Serves 2-4
600 g steak (thickly sliced)
freshly ground black pepper
30 ml Worcester sauce
40 ml olive oil
salt to taste
ONION MARMALADE
60 g butter
1 large onion, sliced
salt and freshly ground black pepper
60 ml balsamic vinegar
60 ml soft brown sugar
30 ml wholegrain mustard
BREAD
about 6 thick slices white bread such as ciabatta
150 g Brie cheese, sliced
Season the steak with freshly ground black pepper and marinate in the Worcester sauce and olive oil for a few minutes.
Heat a griddle pan and grill the steaks for about 3 minutes a side, season and set them aside to rest.
Alternatively cook the steaks over hot coals.
ONION MARMALADE
Heat the butter and fry the onion over medium heat. Season with salt and pepper.
Add the balsamic vinegar, soft brown sugar and wholegrain mustard and simmer over low heat for about 30 minutes,
SANDWICHES
Arrange the slices of bread on a baking sheet, cut the steak into thin slices and arrange them on top of the slices of bread.
Arrange the cheese slices on top of the steak and heat the sandwiches until the cheese has just melted.
Spoon a large dollop of the onion marmalade on top and serve with a salad.
