Steaks with mushroom topping

Serves 4
4 steaks (200 g each)
salt and freshly ground black pepper
30 ml (2 T) olive oil
250 g brown mushrooms
6 red spring onions or 1 small onion, finely chopped
30 ml (2 T) wholegrain mustard
80 ml (1/3 c) creamed cream cheese
1 egg, whisked
250 g green beans, blanched
Preheat the oven to 220 °C and heat a griddle pan.
Grill the steaks over high heat for 1 minute on each side, season with salt and pepper and set aside.
Heat the oil in a pan and fry the mushrooms until all the moisture has evaporated.
Add the spring onions and fry for 1 minute.
Remove from the heat.
Spoon the mushroom mixture into a mixing bowl and season with salt, pepper and wholegrain mustard.
Stir in the cream cheese and egg and season if necessary.
Transfer the grilled steaks to a greased baking sheet and spoon the mushroom mixture on top of the steaks.
Heat for 5-10 minutes or until the topping has set.
Serve with green beans.
