Baked fish with bacon topping

Serves 4
125 g bacon, cut into pieces
juice and zest of 1 lemon
100 ml dried breadcrumbs (available from bakeries or make your own, see tip)
50 ml finely chopped parsley
100 g feta cheese, crumbled
4 large white fish fillets of your choice (about 150 g each)
salt and freshly ground black pepper
Preheat the oven to 200 °C.
Arrange the bacon on a greased baking sheet and bake until crisp.
Put the bacon on a chopping board and chop into small pieces.
Mix the bacon, lemon juice and zest, breadcrumbs, parsley and feta cheese.
Season the fish fillets with salt and freshly ground black pepper and arrange them on a baking sheet.
Spoon the bacon mixture on top of the fish fillets and bake for about 10-15 minutes or until done.
Serve with rice, potatoes or couscous.
TIP: To make dried breadcrumbs remove the crusts of slices of day-old bread.
Put the bread slices in a food processor and pulse until soft breadcrumbs form.
Sprinkle the breadcrumbs on a baking sheet and dry in an oven preheated to 120 °C for about 15 minutes or until lightly browned.
Put the dried breadcrumbs in the food processor again and pulse until fine.
Freeze if not using immediately.
