Easy pizzas (using leftover meat)

Serves about 4
4-6 pitta breads
about 80 ml pesto
200 g mozzarella cheese, grated
100 g Cheddar cheese, grated
250 g cooked leftover chicken, pork or steak, cut into thin strips
200 g cherry tomatoes, halved
basil and/or onion marmalade
Preheat the oven to 220 °C and grease a large baking sheet with oil or food spray.
Arrange the pitta breads on a baking sheet and spread them with the pesto.
Mix the mozzarella and Cheddar cheeses and divide the mixture in half.
Spread half the cheese on top of the pesto, followed by the meat and tomatoes.
Bake for 10 minutes and remove from the oven.
Divide the remaining cheese among the pittas and bake for another 5 minutes or until the cheese has melted and is done.
Cut the pizzas into slices and scatter basil on top.
Serve with onion marmalade.
TIP If you don’t have leftover meat on hand grill a piece of steak, chicken breasts or pork fillet in a griddle pan and season with your favourite marinade.
