French toast with bacon and cheese

Serves 2-4
250 g bacon
6 eggs, whisked
salt and freshly ground black pepper
oil for frying
6 thick slices white bread or 1 small French loaf, sliced
60 ml pesto
150 g Cheddar cheese, grated
Preheat the oven to 200 °C.
Heat a pan and fry the bacon until cooked and crisp.
Remove from the pan and set aside.
Use the same pan for the eggs.
Whisk the eggs in a large mixing bowl and season with a little salt and freshly ground black pepper.
Heat a little of the oil in the pan.
Dip a slice of bread in the whisked eggs.
Fry the bread on both sides until done and golden.
Once all the bread slices have been fried arrange them on a greased baking sheet and evenly divide the bacon among them.
Spoon a little of the pesto on top of the bacon and scatter the cheese on top.
Bake for about 5 minutes or until the cheese has melted.
Serve with a salad.
Tip: If you like sweet accompaniments serve the dish with a little syrup.
