GEVULDE WILDVLEIS RIBBETJIE

2kg wildsvleis rib, ontbeen en gesout 250ml gedroogde appelkose

200g bees maalvleis 5ml sout

1 knoffelhuisie, gekneus 3 repies spek, opgesny

5ml gekapte tiemie 100g margarien

200ml appelsap

Meng die appelkose, maalvleis, sout, knoffel en tiemie om die vulsel te vorm. Smeer aan die binnekant van die rib en rol dit op. Bind dit vas met tou. Plaas die rib in 'n braaipan, smeer margarien oor die rib en gooi die appelsap oor. Bedek die rol met tinfoelie om te verhoed dat dit uitdroog wanneer dit bak. Bak vir 2-2½ uur met die deksel op teen 180ºC. Bedruip gereeld met die appelsap in die bak. Sny die tou en sny die vleis in porsies. Bedien met bruin rys en en droëvrugte slaai.
