Italian Ice

Serves 6-8
Ingredients
• 1/2 seedless watermelon, cut into cubes
• 1 lime, juiced
• 1/2 lemon, juiced
• 1/4-1/3 cup sugar, or to taste (we use less sugar with really sweet watermelons)
Directions
1. In two batches, combine watermelon, lemon and lime juice, and sugar in a blender and blend until smooth.
2. Once smooth, pour mixture into a large baking dish.
Note: if you can’t find a seedless watermelon, you can use a regular one - just strain it before pouring it into baking dish.
3. Transfer baking dish to freezer and let chill for 2 hours.
4. Remove watermelon mix from freezer and use a fork or spoon to scrape the top, frozen layer of ice. (Edges will be harder than centre.)
5. Return dish to freezer and let chill another 2-3 hours.
6. Repeat scraping process and return to freezer until the whole mixture is shaved.
7. Serve immediately, or cover and store in freezer.
