Baked apple and buttermilk pudding

Serves 4-6
Preparation time: 10-15 min
Baking time: 25-30 min
1 can (400 g) apples, drained, or 4-5 fresh apples, cut in quarters
250 ml (1 c) flour
pinch of salt
250 ml (1 c) sugar
4 extra-large eggs
250 ml (1 c) buttermilk
20 ml (1⁄3 c) fresh lemon juice
lemon rind
ice cream or stiffly whipped cream to serve
Preheat the oven to 200 °C and arrange the apple pieces in a 22 cm cake tin or ovenproof dish. Sift together the flour and salt in a mixing bowl. Using an electric beater, whisk together the sugar and eggs until light and creamy. Add the buttermilk and lemon juice. Whisk in the flour mixture. Spoon the batter over the apples and bake for 25-30 minutes.
Garnish with the lemon rind and serve with ice cream or stiffly whipped cream.
