Chicken and mealie kebabs

Makes 6
Preparation time: 20 min
Marinating time: overnight
Cooking time: 20 min
MARINADE
60 ml (¼ c) olive oil
60 ml (¼ c ) lemon juice
50 ml chopped coriander
2 large cloves garlic, crushed
KEBABS
6-8 skinless chicken breast fillets, cubed
salt and freshly ground black pepper
1 large green pepper, cubed
2 green mealies, parboiled and cut into pieces
MARINADE
Mix the olive oil, lemon juice, coriander and garlic in a glass bowl.
KEBABS
Season the chicken cubes with salt and freshly ground black pepper and add to the marinade. Mix well and leave to marinate overnight.
Thread the chicken cubes onto kebab skewers that have been soaked in water, alternating with the pepper cubes and mealie pieces.
Cook over medium coals for about 15 minutes or until just done. Take care not to overcook the kebabs or the chicken will be dry.
Serve the kebabs with toasted sandwiches and a green salad.
