Recipe: Quick Beans

Serves 6

Preparation time: 15 min

Cooking time: 20-25 min

A delicious way to enjoy green beans. Always use young beans for the dish.

50 ml butter

30 ml olive oil

1 onion, finely chopped

salt and freshly ground black pepper

1 red pepper, cut into strips

500 g fresh young green beans

50 g flaked almonds

30 ml Dijon mustard

fresh oregano to garnish

Heat the butter and oil in a fairly deep pan or pot and stir-fry the onion until just soft. Season with salt and freshly ground black pepper. Add the red pepper and stir-fry for 1 minute. Add the green beans and stir-fry for a few minutes. Add the almonds and mustard and mix well. Garnish with fresh oregano.
