Aebleskiver Pancake Balls

Yield: 2-3 dozen
Ingredients
• 2 cups buttermilk
• 2 cups all-purpose flour
• 2 large eggs, separated
• 1 1/2 tablespoons sugar
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon salt
• powdered sugar, garnish
• jam or fruit preserves, garnish
• non-stick spray
• aebleskiver pan, puff pancake pan or mini muffin tin
Directions
1. Sift together flour, baking powder and salt in a small bowl and set aside.
2. In a large bowl, beat together the egg yolks and sugar until light and creamy.
3. Alternate adding flour mixture and buttermilk to eggs, beginning and ending with the dry ingredients.
4. In a separate bowl, beat egg whites until stiff peaks form, then gradually add them to batter.
5. Spray aebleskiver pan (or mini muffin tin) with non-stick spray and heat over medium-high heat until hot; non-stick spray should sizzle.
6. Reduce heat to medium and add 1-1 1/2 tablespoons batter to each pancake mould.
7. Use a spoon or knife to run around the edges of the mould and flip pancakes when edges are golden brown and begin to bubble and pull away from the sides.
8. Cook other side for another 1-2 minutes.
9. Dust finished aebleskiver with powdered sugar and serve plain or with fruit preserves.
