Grilled Pear and Spinach Salad – Recipe Card

Ingredients:
1/2 lb. whole pecans
2 Bosc or Bartlett pears
2 tablespoons of vegetable oil
2 bags of leaf spinach (9 oz. each)
1 lb. red seedless grapes
2 cups of bleu cheese crumbles
1/2 medium red onion, sliced
1 cup diced Roman tomatoes
1 cup raspberry vinaigrette dressing
2 mandarin oranges, peeled
Directions:
Cut each pear in half lengthwise and remove stem, bottom, and seeds. Slice each half into 3/16” slices. Lightly brush oil each pear slice on both sides, place on grill for 1 minute per side. Chill pear slices for 30 minutes.
In large chilled mixing bowl, place spinach, grilled pears, grapes, bleu cheese crumbles, red onion slices, chopped roasted pecans, tomatoes, and vinaigrette dressing. Garnish with mandarin orange.
