Stir-Fried Chicken with Peppers – Recipe Card

Ingredients:
1 yellow bell pepper, 1 red bell pepper, cut into 1/2 inch wide strips
1 onion, cut into strips
1 cup of fresh snow peas
1/4 cup chopped cilantro
1 cup of baby corn
3 pounds skinless, boneless, chicken breast halves – cut into 1 inch strips
2 tablespoons of garlic powder
2 tablespoons of soy sauce
2 tablespoons of oyster sauce (or your favorite stir fry sauce)
1 large ripe tomato, chopped
Directions:
In a large skillet over medium heat, add 3 tablespoons of oil, bell peppers, onions, peas, baby corn, and half the cilantro.
Stir and cook for 1 minute.
Season the chicken with garlic powder, soy, and oyster sauce and stir into the pan.
Cook mixture until chicken is no longer pink in the middle, about 20 minutes.
Remove skillet from heat and sprinkle the remaining cilantro, tomato over the top of the chicken mixture.
Cover and let it sit for 3 minutes.
