Cinnamon buns

Makes 1 medium loaf • Preparation time: 20 min • Baking time: 40 min
LOAF
• 500 g self-raising flour
• 5 ml (1 t) salt
• 1 bottle (340 ml) pilsener beer
FILLING
• 1 packet (100 g) almonds, roughly chopped
• 1 packet (100 g) pecan nuts, roughly chopped
• 100 g cranberries and/or soft apricots
• 10 ml (2 t) ground cinnamon
• 80 ml (1⁄3 c) honey
• 150 g butter
TOPPING
• 50 g butter
• 125 ml (½ c) brown sugar
TO SERVE
• cream cheese (optional)
1 Preheat the oven to 180 °C and grease a narrow rectangular baking tin.
2 LOAF Mix the self-raising flour, salt and enough beer to make a stiff dough. Roll the dough into a rectangle on a floured surface.
3 FILLING Mix the filling ingredients and spread the mixture evenly over the dough.
4 Roll up the dough, cut the roll into 5 cm slices and arrange the slices in the prepared baking tin.
5 TOPPING Cream together the butter and sugar. Dot the slices with the butter mixture and bake for 40 minutes or until done.
6 TO SERVE Top the hot slices with cream cheese (if using).
VARIATION
Prepare the dough as described, adding a few handfuls of seeds and Cheddar or another cheese of your choice. Put the dough in a loaf tin and bake for 40 minutes or until done. Serve with butter and cheese.
