Ricotta flapjacks

Serves 4 • preparation time: 7 min • cooking time: 12 min
• 1 extra-large egg
• 250 ml (1 c) low-fat or fat-free milk
• 250 ml (1 c) wholewheat flour (Nutty Wheat)
• 5 ml (1 t) caster sugar
• 250 g ricotta
• 5 ml (1 t) bicarbonate of soda
1 Whisk together the egg and milk.
2 Add the flour, caster sugar, ricotta and bicarbonate of soda and beat until blended.
3 Heat a nonstick pan and brush with a thin layer of oil.
4 Cook spoonfuls of the batter until golden on both sides and done.
5 Remove from the pan, drizzle with a little honey and serve with fresh berries.
TIP Ricotta is a fresh cheese with a slightly sweet taste. It’s low in fat and has a crumbly texture similar to cottage cheese but is lighter. It’s a good low-fat alternative to use in baking and is also delicious in salads and fillings for pasta such as cannelloni.
