Tikka beef burgers

500g beef mince
45 ml (3T) tikka curry paste
30 ml (2 T) chopped fresh coriander
salt and pepper
15 ml (1 T) olive oil
TOMATO RELISH
15 ml (1 T) olive oil
250 g cherry tomatoes
½ onion, chopped
2 green chillies, chopped
15 ml (1 T) red wine vinegar
15 ml (1 T) caster sugar
small handful of fresh coriander, chopped
TO SERVE
4 burger buns, halved and toasted
handful of rocket
1 red onion, cut into rings
coleslaw
1 Put the mince, curry paste and coriander in a bowl, season with salt and pepper, then mix well with your hands. With wet hands, shape into 4 burger patties.
2 Preheat a pan over medium-high heat. Brush the burger patties with oil and cook, turning once, for 15 minutes or until done.
3 Tomato relish: Heat the oil in a pan over medium high and fry the cherry tomatoes and onion for 5 minutes. Add the chillies, vinegar and caster sugar and cook for 15 minutes or until slightly thickened. Stir in the coriander and set aside.
4 To serve: Top the bottom halves of the buns with rocket, onion, rocket and the patties. Cover with the top halves of the buns and serve with the tomato relish and coleslaw.
