ROOSTERKOEK BOERIE BITES WITH CURRIED ONIONS

SERVES: 4 TIME TO MAKE: 45
A perfect snack with drinks around the fire.
INGREDIENTS 60 ml flour 500 grams PnP bakery ready-made dough 500 grams PnP boerewors 10 ml PnP sunflower oil 5 ml ground cumin 5 ml PnP ground coriander 3 PnP onions, thickly sliced 1 PnP tomato, chopped 1 handful PnP fresh rocket
METHOD Place bread dough on a lightly floured surface. Divide into 8 -10 pieces. Flatten each piece into a rough square shape. Place on a baking tray and rest for 20 minutes. Prepare medium coals and braai roosterkoek for 10 -13 minutes a side until golden (they’re done when they make a hollow sound if tapped on the bottom). Braai wors over medium coals until cooked. Heat oil in a pan. Fry cumin and coriander with onion until fragrant. Stir in tomato. Slice each roosterkoek in half. Top with a piece of boerewors, curried onions and rocket
