PANINI STEAK SANDWICH

Ingredients
1 panini or similar 1 sirloin steak (about 150-200g) lemon, squeezed 100 ml balsamic vinegar 1 Tbsp olive oil, plus extra for frying Salt, to taste pepper, to taste 1/4 of each red, yellow and green peppers, diced 1 pinch white sugar plus extra for sprinkling in ramekins rocket butter, divided
Cooking Instructions
Marinade the steak for 1/2 hour in the lemon juice, balsamic vinegar and 25ml of olive oil. Heat a griddle pan and when it is smoking hot, place the steak into the hot pan and sear on each side for about 2 minutes. In the meantime, heat some olive oil in another pan and add the peppers. Saute for a minute or so and add the salt, pepper and sugar. When the peppers are softer, but still have a bite to them and are caramelized, remove from the pan from the heat and keep to one side. When the steak is cooked, remove it from the pan and let it rest for 5 minutes. Slice open the panini and butter both halves. Place a layer of rocket leaves on the one half. Top with the sirloin and then with the roasted peppers. Spoon the pan juices over the sandwich. Serve immediately.
