300 g arboriorys (sien nota) 1 liter groente-aftreksel 6 ryp tamaties, geskil en gekap 1 ui, fyn gekap 4 knoffelhuisies, fyn gedruk 100 g botter 75 ml olyfolie 2 hande vol gerasperde parmesaankaas Sout na smaak

Smelt 50 g van die botter in ‘n pot en voeg die olyfolie by. Braai die ui daarin tot sag, voeg die knoffel by en braai vir 2 minute. Voeg die rys by en roer totdat al die korrels bedek is. Voeg 125 ml van die aftreksel by. Roer tot dit geabsorbeer is en voeg nog soveel by. Herhaal terwyl geroer word tot al die aftreksel gebruik en die rys gaar, maar steeds ferm is. Roer die gekapte tamaties en die res van die botter by. Roer deur en voeg laastens die parmesaankaas en sout na smaak by. Genoeg vir vier mense.
